There's no better way to showcase farm fresh heirloom tomatoes and peaches! One bite and you will put this salad in your end of summer rotation. Don't have Burrata cheese or heirloom tomatoes on hand? Just as delicious with ricotta cheese and/or bocconcini cheese with cherry or tomatoes on the vine. 

Serve with fresh crusty Italian bread. Great on it's own or as a side - although don't be surprised if this upstages the main dish!


Ingredients:

Salad:

  • 3 large Heirloom tomatoes, preferably in different colours
  • 1-2 peaches
  • A handful of colourful cherry tomatoes 
  • Burrata Cheese
  • 2 tbsp crushed walnuts
  • Flaked Sea Salt
  • Coarse black ground pepper

Dressing:

* Alternatively you can use 1/3 cup Della Terra Basil Extra Virgin Olive Oil for a more intense herbal flavour.

Garnish:

  • Fresh Basil Leaves
  • Fresh Oregano
  • Fresh Thyme

Method:

  1. Slice heirloom tomatoes, and peaches and arrange on a platter.
  2. Slice cherry tomatoes in halves and some in quarters for different levels of texture and add to the platter.
  3. Open up the ball of burrata cheese and arrange it on the platter in random locations.
  4. Sprinkle crushed walnuts over the salad and add a couple of pinches of flaked salt and black ground pepper over the salad.
  5. In a small jar, combine oils and white balsamic to combine.
  6. Garnish salad with fresh basil, oregano, and thyme.
  7. Drizzle salad with the dressing and serve with rustic Calabrese bread.
